Bush Christmas Log Recipe
A great one for the kids young and old, for Christmas.
Ingredients of Bush Christmas Log Recipe
1 tablespoon icing sugar
2 tablespoons cocoa
2 tablespoons brandy (optional)
600ml thickened cream
425g can stoneless black cherries, drained and placed onto absorbent paper
1 x 250g packet chocolate ripple biscuits
2 x 30g chocolate flake bars, cut gently to form bark
Gum leaves for garnish
Chocolate caramel koalas for garnish
Instructions of Bush Christmas Log Recipe
1.In a large bowl combine icing sugar, cocoa and brandy. Stir in cream and whip to form stiff peaks.
2.Place one half of whipped cream into bowl and reserve. Chop drained cherries and fold into remaining cream.
3.Join biscuits together by standing a biscuit on its side and sandwich together with a generous spread of cherry cream to form a log, leaving 4 biscuits and enough cream for a branch on one side.
4.Spread with reserved cream to completely cover log. Use a skewer to create a swirl effect at each end. Arrange chocolate flake over cream to resemble bark and decorate just before serving with gum leaves and chocolate koalas.
