Valentines Barbecued minted lamb RecipeThis was so easy and yummy. Far exceeded my expectations. Great to get hubby involved and give me a day off. Love the BBQ.Ingredients of Valentines Barbecued minted lamb Recipe8 (about 125g each) mid loin lamb chops125ml (1/2 cup) thick mint sauce (Cornwells brand)12 (about 700g) chat (small coliban) potatoes, washed, halved2 tbs olive oil1 large red onion, halved, cut into thin wedgesSalt & ground black pepper, to taste1 bunch rocket, ends trimmed, washed, driedPreparation Time10 minutesCooking Time35 minutesPreparation of Valentines Barbecued minted lamb RecipePlace the lamb chops in a large, shallow non-aluminium dish. Pour the mint sauce over and turn the lamb to coat well. Set aside.Place the potatoes in a medium saucepan and cover with plenty of cold water. Cover and bring to the boil over high heat. Reduce heat to medium-high and cook, partially covered, for 10 minutes or until just tender. (See microwave tip.) Drain.Brush a barbecue or chargrill with 1 tsp of the oil and preheat on high. Place the potatoes and onion on preheated barbecue or chargrill, sprinkle with salt and pepper, and drizzle with the remaining oil. Cook the potatoes for 4 minutes each side or until golden. Cook the onion, turning occasionally, for 10 minutes or until tender. Transfer the potatoes and onion to a plate and cover loosely with foil to keep warm.Barbecue the lamb chops, basting with the mint sauce occasionally, for 4 minutes each side for medium or until cooked to your liking. Divide the rocket among serving plates and top with the lamb, potatoes and onion.Notes and Tips for Valentines Barbecued minted lamb Recipemicrowave tip: use a fork to pierce the potato halves 3 times each. Place in a single layer in a heatproof, microwave-safe container with 1 tbs of water. Cook, covered with a lid or double-layer of plastic wrap, on High/800watts/100% for 6-8 minutes or until just tender. Cover withfoil and set aside for 5 minutes.leftovers: serve the mint sauce with roast lamb.for the kids:minted lamb salad: replace the onion with slices of zucchini.
