1 1/2 cups (225g) self-raising flour
20g butter, diced
1 cup (250ml) buttermilk
Baby cos lettuce leaves, finely shredded
6 cheese slices
100g shaved ham or turkey

Preheat oven to 220°C. Line an oven tray with baking paper. Place flour and butter in a medium bowl. Use your fingertips to rub butter into flour until the mixture resembles fine breadcrumbs. Make a well in the centre. Pour in buttermilk and use a round-bladed knife to stir until just combined.
Turn mixture out on to a lightly floured surface and gently knead until just smooth. Use your fingertips to press the dough into a 2cm-thick disc. Use an 8cm-diameter star-shaped pastry cutter to cut out star shapes from the dough. Place on the lined tray. Lightly brush the tops with extra buttermilk. Bake for 10-12 minutes or until golden brown and dampers sound hollow when lightly tapped on the base. Remove from oven and set aside to cool.
Use a small serrated knife to split each damper in half. Use an 8cm-diameter star cutter to cut cheese slices into star shapes. Layer the lettuce, cheese and ham on each star damper. Wrap in foil or plastic wrap and place in lunch box.

Tip: Dampers can be frozen at the end of step 2. Wrap in plastic wrap and place in the freezer. When required, remove from freezer and place in the fridge to defrost before continuing to step 3.
