8 limes

3 cups vodka

1/2 cup mint leaves, torn

1/4 cup sugar syrup

4 cups ice cubes

2 litres ginger beer, chilled

Juice 5 limes and chop remaining 3 limes. Combine vodka, 3/4 cup lime juice, chopped lime, mint and sugar syrup in a large jug.

Divide ice cubes and vodka lime mixture between 12 tall glasses. Top with ginger beer. Serve immediately.

Note: For the sugar syrup, combine 1 1/2 cups caster sugar and 1 1/2 cups water in a saucepan over medium heat. Heat, stirring, for 5 minutes or until sugar dissolves. Increase heat to high. Bring to the boil. Pour into a jug. Refrigerate until cold. Makes 2 cups.
