This beautiful Christmas centrepiece is perfect for a merry crowd.

Makes 1 tree

Ingredients of Holiday White Christmas tree
1 topiary mould (see note) (about 20cm tall)
500g royal icing mix (see note)
4 x 100g boxes small meringues (see note) (you'll need about 170 meringues)
20 golden or silver cachous (see note)

Description of Holiday White Christmas tree
Cover mould first in plastic wrap, then foil. Sift the royal icing mix into a bowl and add 1/3 cup (80ml) warm water. Beat the mixture with electric beaters until a soft dropping consistency. Spread half the icing mixture over the mould (don't worry if it's not completely covered as the meringues will cover any patchy spots).

Spread a little of the remaining royal icing on the bottom of each meringue and, starting at the base of the mould, start to build up in circles until tower is completely covered in meringues. Using tweezers, stick cachous here and there between meringues, pressing into the icing to stick.

Notes & tips for Holiday White Christmas tree
Topiary moulds are from garden centres. Royal icing is a powdered pure icing suited to cake decorating, from specialty cake decorating and gourmet shops. Small meringues and cachous are available from supermarkets.

This meringue tower makes a stunning decorative centrepiece. The meringues can be easily removed and served with berries and whipped cream for dessert.
