Ingredients of Christmas Shellfish platters Recipe
24 cooked small Balmain bugs or 12 Moreton Bay bugs
crushed ice
36 shucked Sydney rock oysters or other small oysters
36 cooked king prawns
lemon wedges, sliced rye bread and butter, to serve

Description of Christmas Shellfish platters Recipe
Place 1 bug, hard shell down, on a board. Insert tip of knife under joint between head and body. Pull off head. Cut through centre from tail to top. Gently split open. Remove intestinal tract. Repeat with remaining bugs.

Place ice on 2 large platters. Arrange bugs, oysters and prawns on ice. Serve with lemon, bread, butter, lime mayonnaise and mignonette sauce (see related recipes). Place bowls for discarded shells on the table, along with bowls of warm water and lemon for guests to wash their fingers.
