
Peas with onion and lettuce
Ingredients of Peas with onion and lettuce
250g shelled fresh or frozen peas
50g unsalted butter
100g iceberg lettuce, shredded
1 tbs plain flour
100ml (5 tbs) chicken stock
1 tsp caster sugar
1 bouquet garni
1 cup small white pickled onions
1 tbs chopped flat-leaf parsley
1 tbs thickened cream
Preparation of Peas with onion and lettuce
Cook peas in boiling salted water for 5 minutes. Drain and set aside. Place the butter in a pan over high heat. Add lettuce and cook until just wilted. Add flour and cook for 1 minute, then add stock, sugar and bouquet garni.
Bring to the boil, then reduce heat to low for 5 minutes. Add reserved peas, onions, parsley and cream and stir to combine.
Remove bouquet garni before serving.
