Peas with onion and lettuceIngredients of Peas with onion and lettuce250g shelled fresh or frozen peas50g unsalted butter100g iceberg lettuce, shredded1 tbs plain flour100ml (5 tbs) chicken stock1 tsp caster sugar1 bouquet garni1 cup small white pickled onions1 tbs chopped flat-leaf parsley1 tbs thickened creamPreparation of Peas with onion and lettuceCook peas in boiling salted water for 5 minutes. Drain and set aside. Place the butter in a pan over high heat. Add lettuce and cook until just wilted. Add flour and cook for 1 minute, then add stock, sugar and bouquet garni.Bring to the boil, then reduce heat to low for 5 minutes. Add reserved peas, onions, parsley and cream and stir to combine.Remove bouquet garni before serving.Source: Taste.com.au
