Chocolate peppermint fudge
Indulge in some sweet Valentine's Day romance with these sweet treats sure to melt hearts.

Ingredients of Chocolate peppermint fudge
100g butter, chopped
2 tbsp glucose syrup
395g can sweetened condensed milk
1 1/3 cups firmly-packed brown sugar
180g dark chocolate, finely chopped
1 tsp peppermint essence
Icing sugar mixture, to decorate

Preparation of Chocolate peppermint fudge
Grease a 3cm-deep x 19cm square cake pan. Line base and sides with baking paper, with a 2cm overhang on all sides.

Place butter, glucose syrup, condensed milk and sugar in a medium saucepan over medium heat. Cook, stirring, for 3 to 5 minutes or until sugar dissolves and mixture is smooth. Increase heat to medium-high. Cook, stirring constantly, for 10 to 15 minutes or until mixture is thick and becomes caramel in colour. Remove from heat.

Quickly stir in dark chocolate and peppermint essence until melted and combined.

Spread mixture into prepared pan. Refrigerate for 2 hours or until set. Cut into 3cm squares.
Decorate with icing sugar.

Notes and Tips for Chocolate peppermint fudge
Tips: To make icing sugar hearts, cut heart shapes out of baking paper. Place over fudge pieces and dust with icing sugar. Store in an airtight container in the fridge.
