Rocky road slice Recipe
With squishy marshmallows and sticky licorice, this rocky road is almost too good to share.

Ingredients of Rocky road slice Recipe
Melted butter, to grease
125g plain chocolate biscuits (see tip)
60g unsalted butter, melted
1 x 375g pkt white chocolate melts
1 x 250g pkt mixed marshmallows, halved (see tip)
100g raspberry licorice, coarsely chopped (see tip)
15g (1/4 cup) flaked coconut
1 tbs flaked coconut, extra

Description of Rocky road slice Recipe
Brush an 18 x 28cm (base measurement) slab pan with melted butter to grease. Line the base and 2 long sides with non-stick baking paper, allowing the sides to overhang.

Place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until well combined.

Spoon the biscuit mixture into the prepared pan. Use the back of a spoon to press the mixture firmly over the base. Place in the fridge to chill.

Meanwhile, place the chocolate in a microwave-safe bowl. Melt in microwave on Medium/500watts/50%, stirring every minute, until the chocolate melts and is smooth.

Place the marshmallow, licorice and coconut in a bowl. Add the chocolate and stir until just combined. Use a spatula to spread the marshmallow mixture over the biscuit base. Sprinkle with extra coconut. Place in the fridge for 30 minutes or until firm. Cut into small squares to serve.

Notes & tips for Rocky road slice Recipe
Buy plain chocolate biscuits. If you use chocolate-coated biscuits, the base of the slice may be lumpy and oily.
Use kitchen scissors to chop the marshmallows and licorice - it's easier than using a knife, as the pieces are sticky when cut.
