Equipment You'll need 24 pre-soaked bamboo skewers
Ingredients of Lamb skewers with soy lemon and mirin
750g lamb backstraps, cut into 2cm cubes
2 bunches thin green onions (see note), cut into 2cm pieces
Soy marinade
1 cup reduced-salt soy sauce
2 lemons, juiced, strained
1/2 cup mirin or sweet sherry
2 tablespoons caster sugar
Description of Lamb skewers with soy lemon and mirin
Make soy marinade: Combine soy sauce, 1/2 cup lemon juice, mirin and sugar in a small saucepan. Simmer over medium-low heat for 3 minutes. Remove from heat and set aside to cool.
Place lamb in a large, shallow ceramic dish. Pour soy marinade over lamb, reserving 1 cup for a dipping sauce. Turn lamb to coat. Cover and refrigerate for at least 1 hour. Thread green onion and lamb alternately onto skewers.
Preheat a barbecue grill on high heat. Cook skewers, turning and occasionally brushing with any remaining marinade, for 4 to 5 minutes for medium or until cooked to your liking. Serve with reserved soy marinade for dipping.
Notes & tips for Lamb skewers with soy lemon and mirin
Thin green onions are best for this recipe. They should come in bunches of 10.
