Ingredients of Ham ricotta and rocket cannelloni Recipe
700g ricotta
250g chopped off the bone ham
45g rocket leaves, chopped
1/2 cup grated parmesan
8 fresh lasagne sheets
3/4 cup bottled tomato pasta sauce
1 1/2 cups grated mozzarella
4 roma tomatoes sliced

Description of Ham ricotta and rocket cannelloni Recipe
Preheat oven to 180°C. Lightly grease the base of a large ovenproof baking dish.

Combine the ricotta, ham, rocket, parmesan, salt and pepper in a large bowl.

Cut the lasagne sheets into 14cm x 16cm pieces. Place approximately 1/3 cup of the ricotta mixture along the centre of each sheet and roll up to form a tube. Repeat with the remaining ricotta mixture and lasagne sheets to make 8 tubes.

Spoon the tomato pasta sauce into the base of the greased baking dish. Top with the tubes, arranging them side-by-side. Drizzle the tubes with a little olive oil, then sprinkle with the mozzarella. Top with the tomato slices and bake for 30 minutes or until golden. Serve with a simple green salad if desired.
