Give your Christmas Day a twist by serving panforte (an Italian dessert) alongside your traditional pudding. Add an espresso and a glass of dessert wine for unadulterated bliss.

Ingredients of Panforte Recipe (serves 10)
* 100g blanched almonds, roasted, chopped
* 100g hazelnuts, roasted, skins rubbed off
* 100g (1/2 cup) glace pears, chopped
* 100g (1/2 cup) glace apricots, chopped
* 100g (1/2 cup) glace figs, chopped
* 100g (2/3 cup) plain flour
* 2 tbs good-quality cocoa powder, plus extra to dust
* 1/2 tsp ground cinnamon
* 1/4 tsp ground coriander
* 1/4 tsp ground ginger
* 1/4 tsp ground nutmeg
* 55g (1/4 cup) caster sugar
* 1/2 cup honey
* 100g good-quality dark chocolate, roughly chopped

Description of Panforte Recipe
1. Preheat oven to 150°C. Grease and line a round 20cm spring-form pan.
2. Combine chopped nuts and glace fruits in a large bowl.
3. Sift flour, cocoa and spices together. Add to the fruit and nut mixture and stir to combine. Place the caster sugar and honey in a small saucepan over low heat, stirring until the sugar dissolves. Bring to the boil then remove from the heat.
4. Place the chocolate in a bowl over pan of simmering water until melted. Pour the melted chocolate and honey syrup into the fruit-and-nut mixture. Mix well. Spread the mixture into the pan and bake for 25-30 minutes. Set aside to cool completely in the pan.
5. Once cool, dust with cocoa powder, slice and serve with dessert wine or port and some good coffee.
